1 cup Walnuts
1.5 cup Medjool Dates, pitted (about 10-12 depending on size)
¼ cup Hemp
¼ cup Chia Seeds
2 tsp Peppermint Extract
2 tbsp Raw Cacao
Pinch of Salt
Optional: 4 tbsp of Chocolate Chips Melted and flaky sea salt
- Place walnuts, chia seeds, and hemp in a food processor and process until crumbly.
- Add in pitted dates, peppermint extract, protein powder, raw cacao and salt and process until mixture resembles that of cookie dough.
- Use a cookie scoop, or 2 spoons, and scoop out 12 portions. Roll into tight balls with your hands and then place in the fridge to set for 10 minutes. After setting, drizzle with optional melted chocolate chips and sprinkle with flaky sea salt before digging in.
- Store in an airtight container in the fridge for up to 1 week, or in the freezer for 3 months.
